Prepare the Potatoes

Wash and slice the Russet potatoes into thick chips. Soak them in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Fry the Potatoes

In a large skillet, heat olive oil over medium-high heat. Fry the potato chips in batches until golden and crispy, about 3-4 minutes per side. Remove and drain on paper towels, then season with salt and pepper.

Cook the Beef

In the same skillet, add the ground beef and cook until browned and fully cooked, breaking it up with a spatula. Drain excess fat and season with salt and pepper.

Assemble the Nachos

On a large serving platter, layer the potato chips, followed by the cooked ground beef, diced tomatoes, diced onions, diced green chiles, and pour white queso cheese generously over the top.

Serve

Serve immediately while warm. Optionally, add tortilla chips for extra crunch or substitute chicken for the ground beef.
