Method

Preparation of Broth

    Prepare Butternut Squash

    Peel and dice the butternut squash into small cubes.

    Cook Squash in Broth

    In a large pot, combine the diced butternut squash and vegetable broth. Bring to a boil, then reduce to a simmer and cook until the squash is tender, about 15-20 minutes.

    Blend and Season Broth

    Blend the mixture until smooth using an immersion blender or a traditional blender. Season with salt and pepper to taste. Keep warm.

Cooking Scallops and Lardons

    Cook Lardons

    In a pan, cook the smoked lardons over medium heat until crispy. Remove and set aside, leaving the fat in the pan.
