Method

Burger Preparation

  1. 1

    Prepare the Bison Patties

In a bowl, combine ground bison, salt, and black pepper. Form into two patties.

  2. 2

    Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the bison patties for about 4-5 minutes on each side or until they reach your desired doneness. Add a slice of cheddar cheese on top of each patty during the last minute of cooking to melt.

  3. 3

    Toast the Buns

While the patties are cooking, lightly toast the burger buns on the grill or in a toaster.

Assembly

  1. 4

    Assemble the Burger

On the bottom half of each bun, spread house aioli, then add mixed greens, the bison patty with melted cheddar, and a dollop of bacon jam. Top with the other half of the bun.

Frites Preparation

  1. 5

    Make the Frites

Wash and cut the potatoes into thin strips. Toss with olive oil and salt. Spread on a baking sheet.

  2. 6

    Bake the Frites

Bake in a preheated oven at 425°F (220°C) for about 25-30 minutes, flipping halfway through until golden and crispy.
