Preparation

    Prepare the Fennel Purée

    Trim the fennel bulb, removing the stalks and fronds. Dice the bulb and sauté in 1 tablespoon of olive oil until soft. Add a half cup of water and simmer until tender, about 10 minutes. Blend until smooth and season with salt and pepper.

    Confit the Tomatoes

    Preheat your oven to 250°F (120°C). In a baking dish, combine cherry tomatoes, 2 tablespoons of olive oil, and a pinch of salt. Roast for 2-3 hours until soft and caramelized.

    Make the White Wine Cream Sauce

    In a saucepan, combine heavy cream, white wine, and garlic cloves (smashed). Simmer gently until reduced by half. Season with salt and pepper to taste.

    Prepare the Dill Oil

    In a small saucepan, heat ½ cup of olive oil over low heat. Add chopped fresh dill and let it infuse for 15 minutes. Strain and set aside.

    Cook the Clams

    In a large pot, add the clams and pour in a cup of water. Cover and steam for about 5-7 minutes until all clams are opened. Discard any that remain closed.

    Plate the Dish

    On a serving plate, spread a generous spoonful of fennel purée, top with clams, drizzle the white wine cream sauce, and garnish with confit tomatoes. Finish with a drizzle of dill oil and serve with fresh bread.
