Preparing Puff Pastry

Bake the Puff Pastry

Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface to about 1/8 inch thickness. Cut into rectangles (about 3x5 inches). Place on a baking sheet lined with parchment paper. Brush with beaten egg for a golden finish. Bake for 15-20 minutes or until puffed and golden brown. Let cool.

Making Chantilly Cream

Whip the Cream

In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture until soft peaks form. Be careful not to overwhip.

Preparing Raspberry Gel

Make the Raspberry Gel

In a small bowl, bloom the gelatin in 2 tablespoons of water for about 5 minutes. In a saucepan, combine fresh raspberries, sugar, and lemon juice over medium heat. Cook until raspberries break down, about 5-7 minutes. Strain the mixture through a fine sieve to remove seeds. Return the liquid to the saucepan, add bloomed gelatin, and stir until dissolved. Remove from heat and let cool slightly.

Assemble the Mille Feuille

On a serving plate, place one puff pastry rectangle, top with a layer of Chantilly cream, drizzle with raspberry gel, and repeat the layers. Finish with a puff pastry layer on top. Garnish with crushed pistachios and fresh raspberries.
