Preparation of Halibut

    Preheat the oven to 375°F (190°C). Drizzle the halibut fillets with olive oil, and season with salt and black pepper. Place them on a baking sheet.

    Bake the halibut in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

Soubise Sauce

    Cook the Leeks and Onion

    In a saucepan, melt the butter over medium heat. Add the leeks, onion, and garlic. Cook until softened and translucent, about 10-12 minutes.
