Preparation

    Prepare the Chimichurri Sauce

    In a food processor, combine parsley, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until smooth and set aside.

    Preheat your oven to 425°F (220°C). Halve the baby potatoes and place them in a bowl. Toss with olive oil, garlic powder, salt, and fresh rosemary. Spread them on a baking sheet.

    Prepare the Mushrooms and Onions

    Slice the mushrooms and onion. Heat olive oil in a skillet over medium heat. Add the onions and cook until translucent, then add the mushrooms, salt, and pepper. Cook until browned.

    In a separate skillet, cook the bacon lardons over medium heat until crispy. Remove from heat and drain on paper towels.
