1. Grill the Mushrooms

Preheat the grill. Toss the Royal Trumpet Mushrooms with olive oil, salt, and black pepper. Grill for about 5-7 minutes on each side until tender and slightly charred.

2. Make the Soubise Sauce

In a saucepan, melt butter over medium heat. Add finely chopped onions and sauté until translucent. Stir in heavy cream and simmer until thickened, about 10 minutes. Season with salt and pepper to taste.

3. Prepare the Sherry Vinaigrette

In a bowl, whisk together sherry vinegar, olive oil, Dijon mustard, honey, salt, and black pepper until emulsified.

4. Make the Chive Oil

Blend chopped chives and olive oil in a food processor until smooth. Strain through a fine sieve to remove solids.

5. Assemble the Dish

On a plate, spread a layer of soubise sauce, place grilled mushrooms on top, garnish with frisée, drizzle with sherry vinaigrette, and finish with chive oil.
