    Prepare the Grits

    In a saucepan, bring 4 cups of water to a boil. Add the grits and a teaspoon of salt. Reduce the heat and cook for about 20-25 minutes, stirring occasionally until thickened. Stir in the white cheddar cheese until melted and creamy. Set aside.

    Cook the Pork

    Season the pork chops with salt and black pepper. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the pork chops and cook for about 4-5 minutes per side or until the internal temperature reaches 145°F (63°C). Remove from the skillet and let rest.

    Fry the Shallots

    Thinly slice the shallots. In the same skillet, add another tablespoon of olive oil and the butter. Once melted, add the shallots and cook until golden and crispy, about 3-4 minutes. Remove and drain on paper towels.

    Cook the Eggs

    In the same skillet, crack the eggs and cook sunny side up until the whites are set but the yolks are still runny, about 3-4 minutes.

    Assemble the Dish

    On a plate, spoon the creamy white cheddar grits. Top with the cooked pork chop, a sunny side up egg, and garnish with the crispy shallots. Serve with toasted low-fat bread on the side.
