    Marinate the Pork

    In a bowl, mix the 'nduja with a little olive oil. Rub the mixture all over the pork chops and let them marinate for at least 30 minutes.

    Prepare the Polenta

    In a saucepan, bring 4 cups of water to a boil. Slowly whisk in the polenta, reduce heat to low, and cook for about 15-20 minutes, stirring frequently, until creamy. Stir in salt and pepper to taste.

    Grill the Cauliflower

    Cut the cauliflower into florets. Toss with olive oil, salt, and pepper. Grill on medium heat until tender and charred, about 10-12 minutes.

    Make the Bagna Cauda

    In a small saucepan, heat olive oil over low heat. Add garlic and anchovies; cook until melted and fragrant. Stir in butter until melted and well combined. Add chopped parsley and mix.

    Cook the Pork Chops

    Heat a grill or skillet over medium-high heat. Cook the marinated pork chops for about 5-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

    Serve

    Plate the soft polenta, top with the grilled pork chop, grilled cauliflower on the side, and drizzle with bagna cauda.
