Peperonata Preparation

    Prepare the Peperonata

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced bell peppers and cook until softened, about 5-7 minutes. Add diced tomatoes and season with salt and pepper. Let simmer for 15-20 minutes until the mixture thickens. Stir in chopped purple basil at the end.

    Prepare the Crostini

    Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch slices. Brush each slice with olive oil and place on a baking sheet. Bake for 10-12 minutes or until golden brown and crispy.

    Fry the Capers

    In a small pan, heat the remaining 2 tablespoons of olive oil over medium heat. Add capers and fry until they become crispy, about 2-3 minutes. Remove and drain on paper towels.

    Assemble the Crostini

    Top each crostini with a generous spoonful of the peperonata mixture. Garnish with crispy capers and additional purple basil if desired.
