Directions
- 1
Prepare the Potatoes
Preheat the oven to 200°C (400°F). Wash the fingerling potatoes and cut them in half lengthwise. Toss the potatoes with olive oil, smoked paprika, salt, and black pepper.
- 2
Roast the Potatoes
Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until golden brown and crispy.
- 3
Make the Smoky Tomato Sauce
In a small saucepan, combine the tomato sauce, garlic powder, and chili powder. Simmer over low heat for 5-10 minutes, stirring occasionally, until heated through.
- 4
Prepare the Chili Aioli
In a bowl, mix together the mayonnaise and finely chopped fresh chili. Adjust the amount of chili to taste.
- 5
Serve
Once the potatoes are done, remove them from the oven and place them on a serving plate. Drizzle with the smoky tomato sauce, dollop with chili aioli, and garnish with chopped spring onions.
