Making the Spam

    Prepare the Meat

    Start by grinding the pork shoulder and pork fatback together until finely ground. You can use a meat grinder or a food processor for this step.

    Mix the Ingredients

    In a large bowl, combine the ground pork mixture with salt, sugar, black pepper, garlic powder, onion powder, liquid smoke, cold water, and curing salt. Mix thoroughly until all ingredients are well incorporated.

    Pack the Mixture

    Transfer the mixture into a loaf pan or a small terrine mold. Press the mixture down firmly to remove any air pockets and ensure an even shape.

    Cook the Spam

    Cover the pan tightly with aluminum foil and place it in a preheated oven at 250°F (120°C). Bake for about 2 hours or until the internal temperature reaches 155°F (68°C).

    Cool and Slice

    Once cooked, remove the Spam from the oven and let it cool to room temperature. After cooling, refrigerate for at least 4 hours or overnight. Once chilled, slice and serve.
