Flatiron Steak with Tallow Butter, Grilled Pole Beans with Pesto Rosso, and Crispy Fingerling Potatoes

    Prepare the Fingerling Potatoes

    Preheat the oven to 400°F (200°C). Wash the fingerling potatoes and slice them in half lengthwise. Toss them in olive oil, salt, and pepper, and place them on a baking sheet. Roast for 25-30 minutes until golden and crispy.

    Grill the Pole Beans

    While the potatoes are roasting, preheat a grill or grill pan over medium heat. Toss the pole beans with olive oil, salt, and pepper. Grill the beans for about 5-7 minutes, turning occasionally until they are tender and have grill marks.

    Cook the Flatiron Steak

    Season the flatiron steak with salt and pepper on both sides. Heat a skillet over high heat, add tallow and butter, and once melted, place the steak in the skillet. Cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let rest for a few minutes.

    Prepare the Tallow Butter

    In a small bowl, mix together the melted tallow and butter. Add fresh herbs of your choice for extra flavor.

    Serve

    Slice the steak against the grain, serve with grilled pole beans drizzled with pesto rosso, and crispy fingerling potatoes on the side. Top the steak with the tallow butter mixture before serving.
