Preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices. Arrange the slices on a baking sheet and brush both sides with olive oil. Sprinkle with salt and pepper.

Bake the slices in the preheated oven for about 10-12 minutes, or until golden brown and crispy. Flip them halfway through for even toasting.

In a medium bowl, combine the cooked borlotti beans, romesco sauce, and chopped fresh parsley. Mix well and season with salt and pepper to taste.

Once the bread is toasted, remove it from the oven. Top each slice with a generous spoonful of the borlotti bean mixture.
