    Prepare the Bone Marrow

    Preheat the oven to 400°F (200°C). Place the bone marrow pieces on a baking sheet and roast for about 15-20 minutes, until the marrow is soft and begins to separate from the bone.

    Caramelize the Onions

    In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.

    Combine the Ingredients

    Add the beef broth, apple brandy, salt, black pepper, and thyme to the pot with the caramelized onions. Bring to a simmer and cook for another 10 minutes.

    Add the Bone Marrow

    Scoop the roasted bone marrow from the bones and add it to the soup. Stir gently to combine.

    Prepare the Topping

    In a separate bowl, mix the breadcrumbs with melted butter (optional) and season with salt and pepper. Spread the mixture evenly on a baking sheet and toast in the oven until golden brown, about 5-7 minutes.

    Ladle the soup into bowls, sprinkle with fontina cheese, and top with toasted breadcrumbs. Serve immediately.
