In a bowl, mix the olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Add the chicken breasts and coat them well. Let marinate for at least 30 minutes.

Prepare the Chicken

Heat a grill pan over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest.

Cook the Chicken

In a pot, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Cover and reduce heat to low, cooking for about 15 minutes until the water is absorbed and the rice is fluffy.

Prepare the Rice

In the same pan used for the chicken, add the mixed vegetables and sauté for about 5-7 minutes until tender.

Cook the Vegetables

Slice the chicken and serve over a bed of rice, alongside the sautéed vegetables.
