Prepare the crust
Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Bake the crust
Bake the crust in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let it cool while you prepare the filling.

Prepare the filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the granulated sugar and mix until well combined. Add in the sour cream and vanilla extract, mixing until smooth.

Add the eggs
Add the eggs one at a time to the cream cheese mixture, mixing on low speed after each addition until just combined. Be careful not to overmix.

Bake the cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly.

Cool and chill
Turn off the oven and let the cheesecake cool inside with the door slightly open for about 1 hour. Then refrigerate for at least 4 hours, preferably overnight, before serving.
