1. Cook the Pasta
In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 4-5 minutes. Remove from heat and set aside.
3. Prepare the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
4. Combine Ingredients
Add the hot pasta to the skillet with pancetta. Quickly pour in the egg and cheese mixture, tossing continuously to coat the pasta. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
5. Serve
Serve immediately with additional Parmesan cheese and black pepper on top, if desired.
