    Prepare the Codfish

    Soak the salted codfish in water for 24 hours, changing the water a few times. After soaking, drain and shred the codfish into bite-sized pieces.

    Cook the Potatoes

    Peel and cut the potatoes into thin matchsticks. Heat olive oil in a large skillet over medium heat and fry the potatoes until golden and crispy. Remove and drain on paper towels.

    Sauté the Aromatics

    In the same skillet, add more olive oil if necessary, then sauté the chopped onion and minced garlic until translucent.

    Combine Ingredients

    Add the shredded codfish to the skillet and cook for about 5 minutes. Stir in the rice and mix well.

    Add Eggs and Finish

    In a bowl, beat the eggs and pour them over the codfish mixture. Stir continuously until the eggs are set. Add the fried potatoes, black olives, and chopped parsley. Season with pepper to taste.

    Serve

    Serve hot, garnished with extra parsley and olives if desired.
