    Prepare the Green Tomatoes

    Slice the green tomatoes into 1/4 inch thick rounds. Set aside.

    Set Up Breading Station

    In one bowl, place the flour mixed with salt and pepper. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, combine the cornmeal with a pinch of salt.

    Bread the Tomatoes

    Dredge each tomato slice in the flour, then dip it into the egg mixture, and finally coat it with the cornmeal. Set aside on a plate.

    Fry the Tomatoes

    In a large skillet, heat the oil over medium-high heat. Once hot, fry the breaded tomato slices in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Prepare the Herb Mayo

    In a small bowl, combine mayonnaise with your choice of fresh herbs (such as dill, parsley, or chives) and mix well. Season to taste.

    Assemble the Sandwich

    Toast the Texas toast slices. Spread herb mayo on one side of each slice. Layer with lettuce, fried green tomatoes, cheddar cheese, and bacon (if using). Top with another slice of toast.

    Cut the sandwich in half and serve immediately with your favorite sides.
