    In a small saucepan, combine the mixed berries and honey or maple syrup. Cook over medium heat until the berries start to break down and release their juices, about 5-7 minutes. Stir occasionally, and once the mixture thickens slightly, remove from heat and set aside.

    In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and salt until well combined.

    Cook the French Toast

    Heat a skillet or griddle over medium heat and add butter or oil. Dip each slice of gluten-free bread into the egg mixture, allowing it to soak for a few seconds on each side. Place the soaked bread in the skillet and cook until golden brown, about 3-4 minutes per side.
