Instructions

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

  2. 2

    Bake the Crust

Bake the crust in the preheated oven for about 10 minutes. Remove from the oven and let it cool while you prepare the filling.

  3. 3

    Make the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy. Gradually add granulated sugar and beat until smooth. Mix in sour cream, vanilla extract, and eggs, one at a time, mixing until just combined.

  4. 4

    Combine and Pour

Pour the filling over the cooled crust and smooth the top with a spatula.

  5. 5

    Bake the Cheesecake

Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

  6. 6

    Chill the Cheesecake

Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

  7. 7

    Prepare the Topping

Before serving, toss the fresh berries with powdered sugar in a bowl.

  8. 8

    Serve

Slice the chilled cheesecake, top with the berry mixture, and enjoy!
