Prepare the Grits
In a medium saucepan, bring chicken broth to a boil. Stir in the stone ground grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Stir in butter and cheddar cheese until melted and smooth. Season with salt and black pepper to taste. Keep warm.

Make the Etouffee
In a large skillet over medium heat, add olive oil. Once hot, add diced onion and sauté until translucent (about 5 minutes). Add minced garlic and cook for an additional minute. Stir in tasso ham and cook for another 3 minutes.

Add Shrimp and Red Peppers
Add the diced roasted red peppers and shrimp to the skillet. Sprinkle with Cajun seasoning, and cook until shrimp are pink and cooked through (about 5-7 minutes). Adjust seasoning with salt and black pepper.

Serve
To serve, spoon the cheddar grits onto plates and top with the tasso ham and shrimp etouffee. Garnish with sliced green onions.
