Caramelize the Onions
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes. Season with salt and pepper.

Prepare the Rosemary Mayo
In a small bowl, mix the mayonnaise and chopped fresh rosemary together. Set aside.

Assemble the Sandwich
Slice the baguette in half lengthwise. Spread the rosemary mayo on both sides of the baguette. Layer the roast beef, caramelized onions, and provolone cheese on the bottom half.

Toast the Sandwich
Preheat the oven to 350°F (175°C). Place the assembled sandwich on a baking sheet and toast in the oven for 10-15 minutes, or until the cheese is melted and bubbly.

Remove from the oven, slice into portions, and serve warm.
