Method

Curry Directions

  1. 1

    Prepare the Ingredients

In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and grated ginger, and sauté until softened.

  2. 2

Cook the Lamb or Sweet Potato

Add the cubed lamb or sweet potato to the pot and cook until browned on all sides.

  3. 3

    Add Vegetables

Stir in the daikon and celery root, cooking for a few more minutes.

  4. 4

    Spice it Up

Add turmeric, chili powder, coriander, cumin, and salt. Mix well to coat the ingredients in spices.

  5. 5

    Add Coconut Milk

Pour in the coconut milk and lime juice. Bring to a simmer, cover and reduce heat. Cook for 45 minutes, stirring occasionally.

  6. 6

    Final Touches

Season with pepper to taste and check the consistency. If too thick, add a little water. Serve hot.

Naan Directions

  1. 7

    Activate the Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.

  2. 8

    Mix the Dough

In a large bowl, mix flour, salt, and turmeric powder. Add the yeast mixture and yogurt, and knead to form a smooth dough.

  3. 9

    Let it Rise

Cover the dough with a damp cloth and let it rise in a warm place for 1 hour or until doubled in size.

  4. 10

    Shape the Naan

Divide the dough into equal portions and roll each into a ball. Flatten each ball into an oval shape.

  5. 11

    Cook the Naan

Heat a skillet over medium-high heat. Cook each naan for 2-3 minutes on each side until golden brown. Brush with melted butter before serving.
