Preparing the Game Hen

Season the Hens
Preheat your oven to 425°F (220°C). Pat the Cornish game hens dry with paper towels and season the inside and outside with salt and black pepper.

Sear the Hens
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the game hens, breast side down, and sear for about 5-7 minutes until golden brown. Flip and sear the other side for another 5 minutes.

Bake
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the hens are cooked through and the internal temperature reaches 165°F (74°C).

In a small bowl, whisk together black vinegar, honey, and soy sauce until well combined.
Cooking the Broccolini

Prepare Broccolini
While the hens are baking, bring a pot of salted water to a boil. Add the broccolini and blanch for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
