Banana Pastry Cream

Prepare the Cream
In a saucepan, combine milk, sugar, and cornstarch over medium heat. Stir until the mixture thickens. In a separate bowl, whisk egg yolks. Gradually add the hot milk mixture to the yolks, stirring constantly. Return everything to the saucepan, add vanilla, and cook until thick. Remove from heat, add butter, and mix until smooth. Fold in mashed bananas.
Tamari Caramel

Make the Caramel
In a saucepan, combine sugar and water. Cook over medium heat until the sugar dissolves. Increase the heat and let it boil without stirring until it turns a golden color. Remove from heat and carefully stir in tamari sauce. Allow to cool slightly.
Rum Diplomat

Prepare the Diplomat
Whip the cream until soft peaks form. Gradually add powdered sugar and rum, whipping until stiff peaks form. Gently fold this mixture into the cooled banana pastry cream until well combined.
Sesame Tuile

Bake the Tuiles
Preheat the oven to 350°F (175°C). Melt the butter and mix with sugar, flour, sesame seeds, vanilla, and salt. Spread thinly on a baking sheet lined with parchment paper. Bake for 8-10 minutes until golden brown. Let cool before removing from the sheet.
