Prepare the Pork Shoulder Chops
1. Season and Sear
Season the pork shoulder chops with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the chops for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
Make the Apple Chutney
2. Cook the Chutney
In the same skillet, add the chopped onion and sauté until translucent. Add the diced apples, brown sugar, apple cider vinegar, ground cinnamon, and salt. Cook over medium heat for about 15 minutes, until apples are soft. Set aside.
Prepare the Mustard Seed Jus
3. Make the Jus
In a small saucepan, toast the mustard seeds over medium heat until they start to pop. Add the chicken or vegetable stock and simmer for 10 minutes. Stir in butter until melted and smooth.
