Prepare the Shrimp Crust
In a food processor, combine the shrimp, salt, and black pepper. Pulse until the mixture is smooth and forms a paste.

Coat the Petrale Sole
Take the petrale sole fillets and spread the shrimp paste evenly on top of each fillet.

Sauté the Mushrooms
In a skillet, heat 1 tablespoon of sesame oil over medium heat. Add the sliced oyster mushrooms and cook until they are golden brown. Remove from skillet and set aside.

Cook the Petrale Sole
In the same skillet, add another tablespoon of sesame oil. Place the coated petrale sole fillets, shrimp side down, and cook for about 4-5 minutes. Flip the fillets carefully and cook for another 3-4 minutes until fully cooked.

Prepare the Broth
In a small saucepan, heat the bone broth and add the grated ginger. Let it simmer for 5 minutes to infuse the flavors.

Serve
Place the cooked petrale sole on a plate, top with sautéed oyster mushrooms, and drizzle with the ginger-infused bone broth. Garnish with sliced green onions.
