Preparation
1. Prepare the Stuffing
In a skillet, cook the chopped onion and minced garlic in a little oil until soft. Add the longanisa sausage and cook until browned. Stir in the cooked rice, cilantro, black pepper, and salt. Mix well and set aside.
2. Make the Crispy Rice
Heat olive oil in a large skillet over medium heat. Add the cooked rice, pressing it down to form a crust. Cook until the bottom is crispy, about 5-7 minutes. Flip and crisp the other side, adding salt to taste.
3. Prepare the Golden Raisin Vinaigrette
In a blender, combine golden raisins, white wine vinegar, olive oil, honey, and salt. Blend until smooth and adjust seasoning as needed.
Assembly
4. Stuff the Squid
Clean the squid and stuff it with the longanisa mixture. Secure the openings with toothpicks.
5. Cook the Squid
Grill or sauté the stuffed squid until cooked through, about 5-6 minutes per side.
6. Serve
Place the crispy rice on a plate, top with the stuffed squid, drizzle with golden raisin vinaigrette, and garnish with Castelvetrano olives and fresh parsley.
