Imperial Wagyu Ribeye Recipe

Method

Prepare the Shiitake Jus

    Rehydrate Mushrooms

    In a bowl, soak the dried shiitake mushrooms in hot water for 20 minutes. Drain and chop.

    Cook the Jus

    In a saucepan, combine the chopped shiitake, beef stock, soy sauce, minced garlic, thyme, salt, and pepper. Simmer for 30 minutes over low heat until reduced.

    Strain

    Strain the jus through a fine mesh sieve and set aside.

Prepare the Chiliyaki Carrots

    Prepare Carrots

    Peel and cut the carrots into thin sticks.

    Cook Carrots

    In a skillet, heat sesame oil over medium heat. Add the carrots and sauté for 5-7 minutes until tender.

    Add Sauces

    Stir in chili sauce, soy sauce, and honey. Cook for an additional 2-3 minutes, then sprinkle with sesame seeds.

Cook the Ribeye

    Preheat Grill or Pan

    Preheat your grill or skillet over high heat.

    Season and Cook

    Season the Wagyu ribeye steaks with salt and pepper. Cook for 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest

    Remove the steaks from heat and let them rest for 5 minutes before slicing.

Serve

    Plate the Dish

    On each plate, place the ribeye steak, drizzle with shiitake jus, and serve with chiliyaki carrots and a dollop of prepared horseradish mixed with sour cream.
