Winemaking Process

    Harvesting the Grapes

    Select ripe Pinot Noir grapes from the vineyard, ensuring they are free from rot and disease.

    Crushing the Grapes

    Gently crush the grapes to release their juice. This can be done using a grape crusher or by hand.

    Fermentation

    Transfer the crushed grapes and juice to a fermentation vessel. Add the yeast and sugar, then cover the vessel to prevent contamination. Let it ferment at room temperature for about 7-14 days, stirring daily.

    Pressing

    After fermentation is complete, press the mixture to separate the liquid from the solids. This can be done using a wine press.

    Aging

    Transfer the wine to an oak barrel or glass carboy for aging. Allow it to age for at least 6 months to develop its flavors.

    Bottling

    After aging, filter the wine to remove any sediment and transfer it to clean bottles. Seal the bottles with corks.

    Enjoy

    Let the wine rest for a few weeks before enjoying. Serve at a slightly cooler temperature (around 55°F or 13°C) for the best flavor.
