Cut and Soak Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to make fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

Prepare Spicy Cheese Sauce
In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux. Gradually add the milk while whisking to avoid lumps. Once the mixture thickens, reduce heat and stir in the cheddar cheese until melted. Add the diced jalapeño and hot sauce, mix well, and set aside.

Assemble the Loaded Fries
On a serving platter, layer the fries. Drizzle the spicy cheese sauce generously over the fries. Top with crumbled bacon, lime crema, sliced green onions, and diced tomatoes. Serve immediately.
