Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into 1/4 inch thick strips to create hand-cut fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Dry the Fries
Drain the soaked fries and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add a batch of fries to the hot oil, being cautious not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

Drain and Season
Remove the fries from the oil and drain on paper towels. Immediately season with salt, pepper, garlic powder, and paprika while they are still hot.

Serve
Serve the hand-cut fries hot with your favorite dipping sauce.
