Crust Preparation

Make the crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Prepare the filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until well combined.

Add remaining ingredients

Add sour cream, vanilla extract, and lemon zest. Mix until incorporated. Add eggs one at a time, mixing on low speed until just combined.

Baking

Bake the cheesecake

Pour the filling over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set and the edges are lightly browned.

Cool

Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for about an hour. Remove from the oven and let it cool completely at room temperature.

Refrigerate

Chill the cheesecake in the refrigerator for at least 4 hours, preferably overnight, before serving.
