Steak Preparation

    Season and Cook the Steak

    Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and sear for 4-5 minutes on each side for medium-rare. Adjust cooking time according to your preferred doneness.

Vegetable Preparation

    Sauté Seasonal Vegetables

    In another pan, sauté the asparagus, carrots, and zucchini in olive oil until tender, about 5-7 minutes. Season with salt and pepper.

Pommes Purée Preparation

    Make the Pommes Purée

    Peel and chop the potatoes, then boil in salted water until tender, about 15-20 minutes. Drain and mash the potatoes. Stir in butter and heavy cream until smooth and creamy. Season with salt to taste.

Hunter Sauce Preparation

    Prepare the Hunter Sauce

    In a saucepan, melt butter and sauté shallots until translucent. Add mushrooms and cook until browned. Pour in red wine and beef broth, and simmer for 10 minutes. Add thyme, and season with salt and pepper to taste.

Assembly

    Plate the Dish

    On a plate, serve the filet mignon alongside the seasonal vegetables and a generous scoop of pommes purée. Drizzle the hunter sauce over the steak and serve immediately.
