Prepare the Ingredients

Drain and chop the artichoke hearts and slice the mushrooms.

Assemble the Panini

Spread basil pesto on one side of each slice of sourdough bread. On two slices, layer the chopped artichoke hearts, sliced mushrooms, and shredded white cheddar cheese. Top with the remaining slices of bread, pesto side down.

Grill the Panini

Heat a panini press or skillet over medium heat. Place the assembled sandwiches in the press or skillet and cook until the bread is golden brown and the cheese has melted, about 3-5 minutes per side.

Serve

Remove the panini from the heat, slice in half, and serve with sundried tomato aioli for dipping.
