Method

Preparing the Steak

  1. 1

    Season the Ribeye

Take the ribeye steak pieces and pat them dry with paper towels to remove excess moisture. This will help achieve a nice sear. Rub each steak with olive oil, then sprinkle both sides generously with salt, black pepper, and garlic powder.

  2. 2

    Let it Rest

Allow the seasoned steaks to sit at room temperature for about 30 minutes. This ensures even cooking.

Cooking the Steak

  1. 3

    Preheat the Grill or Pan

While the steaks are resting, preheat your grill or cast-iron skillet over high heat for about 10 minutes. If using a skillet, add a little olive oil to coat the bottom.

  2. 4

    Sear the Steak

Once the grill or skillet is hot, place the ribeye steaks on it. Sear for about 4-5 minutes on one side without moving them to develop a crust.

  3. 5

    Flip the Steak

Flip the steaks and cook for an additional 3-4 minutes for medium-rare, or longer depending on your preferred doneness. Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.

  4. 6

    Optional Butter Baste

If desired, during the last minute of cooking, add butter and rosemary to the pan and spoon the melted butter over the steaks for added flavor.

Resting and Serving

  1. 7

    Rest the Steak

Remove the steaks from the heat and let them rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute.

  2. 8

    Slice and Serve

Slice the ribeye against the grain and serve immediately. Optionally, garnish with additional rosemary or herbs.
