Preheat the Grill
While the steaks are marinating, preheat your grill to high heat (about 450-500°F or 232-260°C).

Grill the Steak
Once the grill is hot, place the steaks on the grill. Cook for about 4-5 minutes on each side for medium-rare, adding the fresh rosemary sprigs to the grill for added flavor. Use a meat thermometer to check for doneness (130-135°F or 54-57°C for medium-rare).

Rest the Steak
After grilling, remove the steaks from the grill and let them rest for 5 minutes before slicing.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Once the oil is hot, carefully add the potato strips in batches to avoid overcrowding. Fry the potatoes for about 5-7 minutes or until they are golden brown and crispy. Remove them from the oil and drain on paper towels.

While the fries are still hot, sprinkle them with salt to taste. Serve immediately with the grilled steak.
