Calamari Preparation

Prepare the Calamari
In a large bowl, combine the cleaned calamari rings with salt, black pepper, paprika, and garlic powder. Toss to coat evenly.

Set Up Breading Station
Set up a breading station with three shallow dishes: one for the flour, one for the beaten eggs, and one for the breadcrumbs.

Bread the Calamari
Dredge each calamari ring in flour, shaking off excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the breaded calamari in batches, being careful not to overcrowd the pot. Cook for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Sauté Garlic
Add the minced garlic and sauté for about 1 minute, until fragrant and slightly golden.

Add Tomatoes and Spices
Add the crushed tomatoes, oregano, basil, salt, and black pepper. If using, add the red pepper flakes for heat.

Simmer the Sauce
Bring the sauce to a simmer, then reduce the heat to low. Let it cook for about 15-20 minutes, stirring occasionally until thickened.

Garnish and Serve
Before serving, garnish the sauce with chopped fresh parsley if desired.
