Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with flour. Tap out the excess flour.

  3. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Mixing Ingredients

  1. 4

    Combine Eggs and Sugar

In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is thick and pale.

  2. 5

    Add Chocolate Mixture

Slowly pour the melted chocolate and butter mixture into the egg mixture, whisking continuously to combine.

  3. 6

    Incorporate Dry Ingredients

Gently fold in the all-purpose flour, vanilla extract, and a pinch of salt. Mix until just combined.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

  2. 8

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  3. 9

    Cool Slightly

Remove from the oven and let the cakes cool for 1 minute. Then carefully invert each ramekin onto a plate.

Serving

  1. 10

    Add Ice Cream

Serve immediately with a scoop of vanilla ice cream on top or on the side.
