Preparing the Calamari

Clean and Slice the Calamari
Begin by cleaning the calamari. Remove the head and the innards, and peel off the outer skin. Rinse under cold water, then slice the calamari into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix until well combined.

Frying the Calamari

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dip each calamari ring first into the egg mixture, allowing any excess to drip off, then coat it with the flour mixture, pressing lightly to adhere.

Fry the Calamari
Working in batches, carefully place the coated calamari rings into the hot oil. Fry for about 2-3 minutes until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
Making the Marinara Sauce

Add the Tomatoes and Seasonings
Add the crushed tomatoes, dried oregano, salt, black pepper, and red pepper flakes. Stir to combine and bring to a simmer.

Finish the Sauce
Let the sauce simmer for about 15 minutes, stirring occasionally. Add chopped fresh basil before serving.

Serve the fried calamari hot with a side of marinara sauce for dipping.
