Prepare the Stuffing

    Cook the Rice

    In a medium saucepan, combine 1 cup of long-grain rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed.

    Sauté the Onions

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 finely chopped medium onion and sauté until translucent, about 5 minutes.

    Mix the Filling

    In a large bowl, combine the cooked rice, sautéed onions, 1 cup of chopped fresh parsley, 2 tablespoons of chopped dill, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of allspice. Mix well until all ingredients are combined.

    Prepare the Grape Leaves

    Rinse the jarred grape leaves under cold water to remove excess brine. Lay them flat on a clean surface, vein side up.

    Stuff the Leaves

    Place about 1 tablespoon of the rice mixture at the base of each grape leaf. Fold the sides over the filling and then roll up tightly from the base to the tip. Repeat until all leaves and filling are used.

Cooking the Stuffed Grape Leaves

    Prepare to Cook

    In a large pot, arrange the stuffed grape leaves seam side down. Pour 2 cups of water over them, drizzle with 2 tablespoons of olive oil, and add the lemon juice and lemon slices on top.

    Simmer the Grape Leaves

    Cover the pot with a lid and bring to a gentle simmer over medium heat. Cook for about 40-45 minutes, or until the grape leaves are tender and the flavors have melded.

    Serve

    Remove from heat and let cool slightly. Serve warm or at room temperature, drizzled with additional olive oil if desired.
