In a large mixing bowl, take the 24 Oreo cookies and crush them into fine crumbs using a food processor or by placing them in a zip-lock bag and crushing them with a rolling pin.
Make the Filling
Add 8 oz of cream cheese, 1 cup of powdered sugar, and 1 tsp of vanilla extract to the crushed Oreo cookies. Mix them together until well combined and smooth. You can use a hand mixer or mix by hand with a spatula.
Shape the Mixture
Once the mixture is well combined, take small portions (about 1 tablespoon each) and roll them into balls. Place the balls on a baking sheet lined with parchment paper.
Freeze the Balls
Place the baking sheet with the Oreo balls in the freezer for about 30 minutes to firm up.
Coating
Melt the Chocolate
In a microwave-safe bowl, combine 1 cup of dark chocolate chips and 2 tablespoons of coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
Coat the Oreo Balls
Once the Oreo balls are firm, dip each ball into the melted chocolate, ensuring they are fully coated. Use a fork to lift them out, allowing any excess chocolate to drip off.
Set the Coated Balls
Return the coated Oreo balls back to the parchment-lined baking sheet. Once all are coated, you can sprinkle some crushed Oreo on top for decoration if desired.
Freeze Again
Place the baking sheet back in the freezer for at least 30 minutes to allow the chocolate coating to set completely.
