Prepare the Lamb

Mix the Ingredients
In a large bowl, combine the ground lamb, minced garlic, dried oregano, ground cumin, salt, black pepper, and olive oil. Mix thoroughly until all ingredients are evenly incorporated.

Shape the Lamb
Form the mixture into small patties or logs, about the size of your palm. Ensure they are compact to hold their shape while cooking.

Prepare the Tzatziki Sauce

Mix the Tzatziki Ingredients
In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and chopped fresh dill. Stir well until all ingredients are combined.

Chill the Sauce
Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Assemble the Gyros

Prepare the Pita
Warm the pita bread in a dry skillet or microwave for a few seconds until soft and pliable.

Layer the Ingredients
Place some shredded lettuce on each pita, followed by slices of cooked lamb, tomato slices, and red onion.

Drizzle a generous amount of tzatziki sauce over the top of the meat and vegetables.

Wrap and Serve
Fold the pita over the filling, wrap it in parchment paper if desired, and serve immediately.
