Preparing the Falafel

    Soak the Chickpeas

    In a large bowl, soak the dried chickpeas in water overnight or for at least 8 hours. Ensure they are fully submerged.

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms, scraping down the sides as needed.

    Form the Falafel Balls

    Transfer the mixture to a bowl and refrigerate for at least 30 minutes. Once chilled, use your hands to form small balls or patties, about 1.5 inches in diameter.
