Marinating the Chicken

Prepare the Marinade
In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, black pepper, and paprika. Mix well.

Cut the boneless chicken breasts into 1-inch cubes and add them to the marinade. Toss until the chicken is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

While the chicken is marinating, soak the wooden skewers in water for at least 30 minutes to prevent burning.

In a large bowl, combine diced cucumber, diced tomato, thinly sliced red onion, and crumbled feta cheese.
