Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Prepare Nut Filling

    In a food processor, combine walnuts, pistachios, sugar, and ground cinnamon. Pulse until finely chopped but not powdered. Set aside.

    Prepare the Filo

    Melt the butter in a small saucepan. Unroll the filo dough and cover it with a damp kitchen towel to prevent it from drying out.

Assembly

    Layer the Filo

    Brush a 9x13 inch baking dish with melted butter. Place one sheet of filo in the dish and brush with butter. Repeat this process, layering 8 sheets, each brushed with butter.

    Add Nut Filling

    Spread a portion of the nut filling evenly over the layered filo. Layer 4 more sheets of filo, brushing each with butter, then add another layer of nut filling. Repeat until all filling is used, finishing with a final layer of 8 filo sheets brushed with butter.

Baking

    Cut and Bake

    Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes, or until golden brown and crisp.

Honey Syrup

    Prepare Honey Syrup

    While the baklava is baking, combine honey, water, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and let cool.

    Add Syrup

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled honey syrup over the hot baklava. Allow it to soak for at least 4 hours or overnight before serving.
