Preparation
Prepare the fries
Wash and peel the Russet potatoes. Cut them into thin strips to form fries. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Heat the oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).
Fry the potatoes
Drain the soaked fries and pat them dry with paper towels. Carefully add a batch of fries to the hot oil and fry until golden brown, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Repeat with remaining fries.
Season and top
While the fries are still hot, sprinkle them with salt and drizzle with white truffle oil. Toss to coat evenly, then add freshly grated Parmesan cheese on top.
